[Recipe] Gulai Ayam

In english, you can say chicken curry, i guess.

(For 1/2 of whole chicken cut into 6 pieces)
Ingredients:

  • Galangal, about half the size of your thumb
  • Ginger, a bit smaller than the galangal
  • Turmeric, a bit smaller than the ginger
  • 4 shallots
  • 3 garlics
  • 4 Red chilies (or about 1 tsp of chili paste)
  • 3/4 cup of Coconut milk (or about 50ml or Coconut Cream)
  • 4 lime leaves
  • 1 salam leaf
  • 1 stalk lemon grass
  • 1 turmeric leaf
  • 2 tbs vegetable oil
  • 3 cups of water
  • Salt
Instruction:
  • Grind galangal, ginger, turmeric, shallots, garlic, and chilies to become a spice paste.
  • Heat the oil in a saucepan, and then stir fry the spice paste for about two minutes.
  • Add in the leaves and lemon grass, continue to stir fry until fragrant.
  • Add the chicken pieces, and continue to stir fry for about 3-4 minutes over a medium temperature.
  • Pour water onto the chicken and bring to boil.
  • Add the coconut milk, and stir frequently for about 5 minutes. Then continue to cook for about 20 more minutes.
